The Hayakawa Shoyu Miso company has been established since 1885 during the Meiji era in Japan, they have always challenged themselves to produce the most flavourful miso using only natural ingredients.
Barley miso is a traditional Japanese seasoning made from fermented soybeans, barley, salt and koji. It imparts a rich umami flavour, which is the fifth basic taste, often described as savoury or meaty.
Sesame seeds add a nutty and slightly sweet flavour to the sauce, complementing the umami of the miso.
Hon mirin and rice vinegar give an additional sweetness and depth of flavour while ginger and garlic add complexity.
