Finger limes, also known as the Australian finger lime or citrus australasica fruit, grows on citrus trees and is often referred to as lime caviar. The plant thrives in full sun, so they are only available to purchase during specific seasons. These fruits offer an experience unlike any other citrus species making them a unique addition to dishes.

The pearls of citrus burst in the mouth pairs spectacularly well with sushi, sashimi and almost any fish dish. The eating sensation is much like caviar, hence the nickname citrus caviar, but with a lemon and lime acidic, tangy flavour that is only released when the tiny bubbles burst in the mouth.
Stores well in the fridge for 14 days.
